Ingredients:
- 1 French Stick
- 3 Cups fresh basil, chopped
- 1 cup pine nuts
- 2 cloves garlic, crushed
- 1 cup fresh parmesan, grated
- 3/4 cup extra virgin olive oil
- 3 Fresh tomatoes, diced
- 1 red onion, diced
- Balsamic vinegar

- Olives

- Blender or Food Processor
The Bruschetta
- Cut the bread into 1-2 inch thick slices on a diagonal, and toast in the oven on moderate heat until golden brown
- The Pesto: Combine 1/2 of the cup of olive oil, garlic, basil, pine nuts, and 1/2 the cup of parmesan in a food processor or blender until it has the consistency of a paste
- Remove the bread from the oven, and apply pesto
- Combine 1/4 cup of olive oil, tomatoes, onion, and remaining cheese in a small bowl
- Put a few spoonfuls of the tomato mixture on the bread
- Drizzle with balsamic vinegar and top with olives if desired.
This one is great if you have guests, or if you're just a little peckish. It also goes great with a quality red or white wine, and is perfect for all seasons!
